Hello again.

Here’s another summery recipe for you!  This is the non-alcoholic honeydew lime cooler that Tim and I made this weekend to bring along to our Memorial Day Picnic at Walden Pond.

Non-Alcoholic Honeydew Lime Cooler

Recipe inspired by Women’s Health

 

Ingredients

Serves 4

  • 2 cups cubed honeydew
  • 1 cup water
  • Juice of 1 lime
  • Seltzer — amount flexible
  • Agave, to taste (optional)
  • Fresh mint sprigs if you’re fancy (I’m not)
  • 4 strawberries for garnish (we sliced up instead)
  • 1 lime, sliced

Directions

  1. Puree the honeydew, water, and juice from the lime.
  2. Pour the mixture through a fine-mesh strainer, pushing pulp down with a spoon to release more liquid.  NOTE:  I did not have a fine mesh strainer, so we did end up with a little bit of pulp in our drink.  It wasn’t too overwhelming but I think if you were to skip the straining step completely you would end up with a grossly pulpy bev.
  3. Divide the liquid among 4 glasses (or pour in large container) and top each one off with chilled seltzer.
  4. Sweeten with agave if you’d like.
  5. Garnish each with mint, strawberries, and lime.

Each serving of this drink has 30 calories, 0 g fat, 8 g carbs, 10 mg sodium, 2 g fiber, and 1 g protein.  Just in case you were wondering.  That will change if you add any vodka or alc to pack an extra punch! 

This was really refreshing for a hot day, and fun to make something different!
