Aside from the topics above, one thing I’m especially interested in reading are about your favorite unhealthy comfort foods. Say what?! I’m considering starting a new series on the blog soon, but I would need to see some of the recipes for your favorite dishes that aren’t exactly so great for you first. I’m leaving this vague on purpose. 🙂

I like to consider my diet healthy. I live a Paleo lifestyle and really enjoy it. I allow myself one or two cheat meals per week and it usually is some sort of Italian dish with pasta and cheese! If I could live off one thing for the rest of my life, it would be the 5 Ingredient Pizza Spaghetti pie from PaleOMG.com. It tastes like it’s cheesy but it’s really not! Yum! I’ve often got frustrated with food prepping when I didn’t have a plan. I think it’s important to know exactly what you’re making and how much to make. My favorite unhealthy comfort food? Homemade carrot cake with cream cheese frosting!
Hi! I really like that you follow a Paleo diet but still allow yourself “cheat” meals. I think that’s important because it’s not restricting yourself. I will have to check out the pizza spaghetti pie recipe — it sounds awesome!
As far as food prep goes, I 100% agree with you that I need a plan when food prepping. Some people are better at winging it or prepping batches of things with no plan, but my brain just doesn’t work that way!

I love food! Like a lot, so i don’t really have that one favorite food or meal, but i love sushi, complex saladÑ‹ and tuna tar tar a lot 🙂 I do consider my diet really healthy, but i love to splurge on chocolate. I do try to buy a dark chocolate, but i like the milk one a little better. I never buy lunch, unless somebody is buying it for me hehe, and I always bring it from home. I prep food a lot on Sunday for both me and my boyfriend, so we both take lunches to work.
Hi Alice! I only just recently tried sushi, can you even believe that I went 28 years without it?? I still haven’t tried anything crazy, but that’s a huge step for me. Kinda funny since I love seafood.
If you love dark chocolate, you MUST try the brand Sweetriot and their kickin’ coconut flavor. It is TO DIE FOR! 🙂
Favorite Meal: Linguine with Clam Sauce
I give my diet a 75 as in i eat good 75% of the time.
Pasta or chocolate. I try to limit them to once a week or less, but I love Pasta!
I’m a food blogger so I don’t think there’s enough room for all of my recipes here.
One thing I had to eat forever, Pasta.
Something I hate. Capers, just not a fan.
Lunch is almost always leftovers or a salad for me.
I usually plan my meals out a week ahead and grocery shop all at once. I enjoy cooking every night (helps me de-stress) so I don’t meal prep.
I always want to learn more. Nutrition is not an exact science, and there are new studies all the time. There is always more to learn.
As far as un-healhty comfort foods, I think I covered that with the above. I also love a good Alfredo sauce, fish and chips, traditional pot pies (you know with lots of butter), and gooey chocolate baked goods.

Hi JC! I don’t really like capers either. I don’t NOT like them, but they don’t really do anything for me. If I’m making a recipe that calls for capers, I’ll usually just skip them.

Feeding a family of four (with two picky kids) is challenging, but I think we do eat fairly healthy meals and snacks. An indulgence for us (usually at New Year’s) is fondue…even though we dip veggies and fruit, there is no way to disguise how unhealthy the cheese and chocolate are…but SO yummy!
Hi Liz, I think you do a great job with your kids and keeping a healthy lifestyle! Fondue sounds great. What a fun tradition!
What’s your favorite food or meal? Tricky, I love food but my favorite would probably be ahhh cheese… favorite meal would be any type Salmon dish!
Do you consider your diet healthy? Yes for the most part I eat healthy, but if I am craving something or out I will get what I want!
What’s your favorite food to splurge on? I splurge A LOT on Frozen yogurt and ice cream weekly 😉
Have you tried any new recipes lately that you can share and recommend to others? Yes this week I made a delicious chicken dish. Quick and tasty! –
Juicy Parmesan Crusted Chicken:
4 Boneless skinless chicken breasts
1 cup fat free greek yogurt
1/2 cup grated Parmesan cheese
1 Tablespoon of minced garlic or more (I love garlic!)
1/3 cup Seasoned dry bread crumbs ( or Panko if you’d like)
Mix greek yogurt, parm cheese, and garlic in a bowl.
Place chicken on on a baking sheet ( I used Panko bread crumbs so I seasoned chicken with Salt, Pepper, some Italian seasoning and a few dashes of Paprika )
Spread with mixture over the chicken
Sprinkle break crumbs on the chicken
Bake for 20 minutes at 425ËšF.
What foods do you find absolutely disgusting? Olives olives olives!
Do you normally buy lunch or brown bag it? Bring a lunch every day, unless some one buys is at work 🙂
Do you prepare your meals and snacks at the beginning of the week? What food prep tips can you share with others? Yes Love it, Sundays or Mondays generally. Before shopping have your weekly meals planned out it will help a lot! Make dishes you have have cold, hot, on a salad in a warp to switch it up during the week!
What more would you like to learn about nutrition and healthy eating? I would like to learn more about fighting cravings, and ways to cut back on frequent snacking! {My weakness!}

I usually prep a dinner menu, so that my groceries are set for the week, I can still interchange some meals if I don’t feel like what I picked for that day but at least I have an idea of WHAT I’m going to eat!

I call myself a quasi-vegetarian as the only meat I eat is chicken and eat vegetarian about 6 days a week. I eat the same thing each day for breakfast and lunch and rotate dinner between 3 choices. My downfall is dessert and my favorite comfort foods are chicken pot pie, macaroni and cheese (sometimes I try to healify it by adding broccoli) and any form of potato.
haha Shannon I always shake my head at your meals! I don’t know how you can eat the same thing over and over. I’d get so bored!
I do think I eat healthy. Recently I started to clean it up a bit, cutting back on sugars, especially the abundance of sweets at work, watching labels for too many artificial ingredients, eliminating sweeteners. Recently i have started to cook more fish at home too. I always bring lunch to work! My favorite food or meal is Greek food, using my mother’s and grandmother’s recipes. If I could only eat one thing for the rest of my life, it would be Greek! Love it all. Food that disgusts me is beef stew and meatloaf. I do not prep at the beginning of the week. I could use help in planning more variety for lunches and tend to pack the same things. Keeping things in perspective is helpful, if one meal is a splurge, it is just one out of 21 for the week! And breakfast is a must!
Mom, I still think you should let Tim and I cook you beef stew or meatloaf. I bet they will taste TOTALLY different from whatever you are thinking of from your past!

As a native Southern Californian, I LOVE Mexican food and I’m always looking for a good spot, which is not easy to come by in the Northeast! I tend to go for enchiladas, but I’m always happy with a good burrito, taco, quesadilla, taquito, flauta, etc. I’ve been making slow improvements to what I eat, but it could definitely be better. I find when I try to make a bunch of changes all at once, they don’t stick, so I focus on one thing at a time. E.g., as you well know, I was a HUGE Diet Coke addict but have cut artificial sweetener (including DC!) from my diet almost entirely in the last couple of months. I feel like I have that under my belt now so I’ll add another healthy change soon. Any suggestions? As for something I find disgusting, don’t get mad at me, but I can’t stand any kind of seafood. I don’t know why, but it’s something about the texture or smell or both, I just can’t do it, as much as I’d like to because of how healthy it is (or can be). Just the smell of tuna is enough to make me feel sick. As for my guilty pleasure, there’s a British pub near us that serves the most amazing buffalo chicken mac and cheese I’ve ever had. It’s not a fluke either, it’s ALWAYS good and totally worth the splurge! We don’t prep or even plan our meals much in advance, but that’s something I would definitely like to start doing.
Hi Patrice, if you ever need someone to go on a GOOD Mexican restaurant hunt with you, say the word! I never pass up a good margarita slash burrito, taco, quesadilla, etc. Even though you are a seafood hater, I guess I can let it slide. 🙂
