Swiss Chard and White Bean Gnocchi

In yesterday’s Weekly Eats post, I teased you guys with a picture of the swiss chard and white bean gnocchi dish that Tim and I made last week for dinner.

Swiss Chard Gnocchi

Swiss Chard and White Bean Gnocchi

Recipe adapted from Eating Well

Ingredients

  • Extra virgin olive oil, 1 tbsp and 1 tsp (divided)
  • 1 16-ounce package of gnocchi
  • 1 medium-sized yellow onion, sliced thin
  • 4 cloves of garlic, minced
  • 1/2 cup of water
  • 6 cups or 1 bunch of chopped swiss chard leaves (you could also use spinach if you don’t have chard)
  • 1 15 ounce can of diced tomatoes
  • 1 15 ounce can of cannellini beans
  • 1/4 teaspoon of freshly ground pepper
  • 1/2 cup of shredded mozzarella cheese
  • Parmesan cheese to top it all off with

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the gnocchi and cook, stirring often, until they have plumped up and start to brown (about 5-7 minutes).  Transfer to a bowl.
  3. Add the 1 tsp of olive oil that is left to the pan.
  4. Add the onion and cook over medium heat for two minutes.
  5. Stir in the garlic and water, then cover and cook until the onion is soft (about 4-6 minutes).
  6. Add the greens a cook, stirring, until they start to wilt (about 1-2 minutes).  Note that we did not have a full 6 cups to use, but made do with what we had.
  7. Stir in the tomatoes, beans, and pepper.  Bring to a simmer.
  8. Stir in the gnocchi and sprinkle with mozzarella.
  9. Cover and cook until cheese is melted and sauce is bubbling, about 3 minutes.
  10. Sprinkle with Parmesan, and enjoy!

Swiss Chard and White Bean Gnocchi

You guys have to make this!  I think you’ll love it, but maybe I’m bias.  The only other gnocchi recipe I’ve posted on the blog before is one I actually posted in my very first month of blogging.  This recipe was for gnocchi with goat cheese, tomato, and basil.  Super simple yet delicious.  If you check it out though, you’ll have to excuse the horrible post formatting that came with my beginning blogging months.  Woof!  Anyways, there’s also a sweet potato gnocchi recipe, courtesy of Shannon, featured in my Reader Recipes series!

Gnocchi fans, what other recipes do you like to make?  I could use some more gnocchi in my life!

As much as like eating gnocchi, I actually hate saying the word.  I feel like it’s a gross way to move my mouth.  Like something is stuck in my throat or I’m pursing my lips!  Yuck.
