Last week was a bit different in terms of meal planning and my usual eats. For starters, I only needed to plan for one since Tim was away on a business trip. Also, I had plans on both Wednesday and Thursday that involved dinner out. Finally, between the holiday weekend last weekend and not being sure when Tim’s flight would get in Friday, well, let’s just say it wasn’t my most model week of meal planning.
But that’s ok, and I’ll share my eats with you anyways! As always, these are just the highlights and I do not post everything that I eat.
Last Week’s Eats
Breakfasts
I am definitely not a toast every day kind of girl, but I definitely enjoyed multiple toast breakfasts last week. Between the new bread I’ve been buying from Trader Joe’s and the homemade peanut butter from my foodie penpal, I just couldn’t help it. Topped with sliced banana (and usually chia seeds) is my favorite way to eat toast.
Lunches
For the workweek last week, I had a repeat lunch plan! More cucumber and black-eyed pea salad.
Dinners
Sunday
Tim and I decided to take advantage of a Sunday with no work in the morning. We ventured over to Allston and enjoyed a Mexican themed night at Lonestar Taco Bar. You guys may remember Lonestar from this post when I went out for Cinco de Mayo MUGaritas with the gym ladies last year, or maybe from this post where I talked about a baking disaster due to said mugarita’s hangover. Ha! Tim had yet to go there, so off we went. No mugs this time around, but I did enjoy a couple prickly pear margs (their frozen special of the day). We also had a few kinds of tacos and some chips with guac.
Monday
After our kayaking adventures, we fired up the grill! Skewered up some steak tips from The Meat House with mushrooms, yellow and orange bell peppers, and red onion. Along with corn on the cob and some baked sweet potato fries, it was a fun summer kick off meal!
Tuesday
I kept things simple with a grilled chicken salad.
Wednesday
Went out to eat with Papou and Auntie Paula at Jerry Remy’s. Appetizer = summer berry salad. Entree = turkey burger sans bun. Side = sweet potato fries.
Thursday
The original plan of girls night of four dwindled down to girls night of two! After consulting our “list” of Boston restaurants to try, Slesh and I decided to eat at Temple Bar in Cambridge. I have driven by this place a thousand times, but have never gone in. I liked a lot! We started off with the most delicious vegetarian appetizer. It was a whole board of vegetarian sample items: Parmesan crusted amaranth cakes, romesco, white bean salad, eggplant purée, pickled mushrooms, and pita chips. Loved! For a meal I ordered the duck and beet salad. And topped it all off with some white wine sangria. Was definitely some much-needed catch up time.
Friday
I mentioned this morning that Tim was heading in from DC on Friday night and I had to head to my parents’ house. We timed it so that he could join me for the ride, and we stopped for a pizza at Flatbreads in Bedford on the way home. This pizza was seriously amazing: smoked free-range pork shoulder with homemade organic chipotle BBQ sauce, organic red onions, fresh pineapple, and lots of cheese.
Saturday
Leftover pizza from the night before! On Saturday I also enjoyed some fun food at Ashley’s bridal shower, including the most delicious cupcakes I’ve ever had in my LIFE. No exaggeration.

- Sunday: Leftover picnic sandwiches

- Tuesday: Turkey tacos
- Wednesday: Turkey tacos
- Thursday: Zucchini boats
- Friday: Zucchini boats
- Saturday: Leftovers, throw together, tbd!
I’m also planning to incorporate some green smoothies into my life this week, bake some Lean Green Bean sweet potato brownies and prep some Fitnessista breakfast cookies! Tim and I are definitely trying to be a bit more mindful this week about how much we spend on dinners out (nevermind how much splurging I’ve been doing), but sometimes life just happens and not everything can go according to plan. (Right?!)
