Hey guys, I’m back with my Weekly Eats post. It’s a bit different this week, because today is the start of farm share week!
First, let’s recap some highlights of last week. I’ll start with our dinners…
Sunday
Grilled chicken pesto burgers with corn on the cob and a side salad
Monday
Leftover burgers with leftover zucchini boats from the week before on the side
Tuesday
Cilantro lime shrimp lettuce wraps… next time we will make a pico de gallo to go with it
Wednesday
Healthier eggplant parm with a side arugula salad
Thursday
Leftover eggplant, nothing exciting
Friday
Shrimp and veggie fajitas at Habaneros Tequila Bar on Moody Street… delicious!
Saturday
Clam chowder and nachos at Jerry Remi’s Seaport! Saturday splurge day 🙂
Our lunches consisted of my favorite quinoa salad, either plain or topped on arugula…
or more kale salad topped with fruit and barley.
You guys sick of my quinoa and kale fruit salads yet? I’m not!
My favorite breakfast of the week was honestly a Chobani Almond Coco Loco. I’m obsessed.
And my favorite bevvy of the week was by FAR this blueberry muffin margarita with a graham cracker rim (enjoyed x2). Worth every calorie. And it was the size of my face.
This week’s plan is going to be a little different, as they will be for the rest of the summer. I am splitting a farm share with two of my co-workers starting today. Sheila is taking 50%, Dawn is taking 25%, and I am taking 25%. I’m not sure how this will affect my Sunday meal plan and prep night since the farm announces what produce will be distributed on Mondays, and Sheila is picking up the goodies on Tuesdays to bring in for Dawn and I on Wednesdays. We are just going to have to play this by ear, but something tells me we may switch to Wednesdays instead of Sundays for meal prep day for the rest of the summer.
That being said, we only meal planned for half of this week and will finish out the rest after finding out what our goodies will be and how much we will get. So far on our lineup are fish tacos and roasted peppercorn pasta salad for dinner and chicken salad sandwiches for lunch. I’ll let you guys know how being part of a farm share goes!
What was the healthiest thing you ate last week? Favorite splurge? Do any of you buy farm shares and get your produce that way?
Would love any feedback you guys have!
We did a CSA once, but you never got to choose your produce…so that was tough with the kids. Made for some interesting meals, though!
Love your “Saturday Splurge Day”… it’s nice to know I’m not alone when I go out and enjoy nachos… Jerry Remy’s are GOOD, too!! Sounds like a fun thing you’re doing with your coworkers! Healthiest thing I ate was my spaghetti squash (side note- i originally typed Spaghetti SQUAT. I have issues) and veggies and chicken- so satisfying! your meals look delish- love the shrimp lettuce wraps.
